Air Fryer Gujarati Fafda for Dussehra!!
Fafda is a very popular Gujarati snack often enjoyed during the holidays, especially during Dussehra, Navratri and Diwali! It is a crispy crunchy chickpea flour based cracker flavored with spices including turmeric, black pepper and ajmo (carway seeds).
The fafda dough comes together pretty quickly. And then I use the pasta roller attachment for my stand mixer to roll out the fafda. It makes the perfect shape! While fafda is typically fried, I made these in the air fryer. I can fit about 5 to 6 fafdas in one batch. They air fry for about 5 minutes total and then they are ready to enjoy with khadi!
Air Fryer Gujarati Fafda
Equipment
- Air Fryer
- Pasta Roller
Ingredients
Fafda
- 2 cups besan (chickpea) flour
- 3/4 tsp ajmo (caraway seeds)
- 3/4 tsp ground black pepper
- 1/4 tsp turmeric power
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp avocado oil
- 1/2 cup water
Kadhi
- 1 cup nonfat plain greek yogurt
- 2 tbsp besan (chickpea) flour
- 1 cup water
- 1 tsp avocado oil
- 1/2 tsp black mustard seeds
- 2 medium chili peppers chopped
Air Fryer Marcha
- 4-5 chilis
- avocado oil spray
- salt
Instructions
Fafda
- Combine all of the ingredients to make a soft dough, knead well. Add more water if it’s too dry, or more besan flour if needed.
- Slightly oil your hands and divide in about 30 round balls. Toss the balls in a little more oil.
- Use pasta roller setting 3 to roll out the fafda.
- Air Fry at 400F for 5 minutes total, flipping around 3:30 minutes.
- Enjoy with Kadhi!
Kadhi
- Combine 1 cup yogurt with 2 tbsp besan flour. Mix well.
- Add 1 cup of water to yogurt and mix well. Set aside.
- Add oil to pot and once heated, add 1/2 tsp rye seeds.
- Add chopped chilis to oil, and mix for 10 seconds.
- Add yogurt water mixture to pot, and cook until kadhi thickens.
Air Fryer Marcha
- Cut chilis into quarters and coat with a little avocado oil.
- Air fry at 400F for 2-3 min until they change color.
- Sprinkle with salt.
