Upside Down Blood Orange Olive Oil Cake

I ended up doubling the recipe to make both cupcakes and a cake for my family! When the blood orange olive oil combination was brought to my attention, I did not expect it to turn out that great. I had no idea what the two flavors would taste like together. But since I saw the combo all of Instagram, I knew I had to try it out. The blood orange give a sweet citrus flavor, and the olive oil gives the cake a nice texture. The olive oil is not over powering, instead, its more of a subtle taste. I can’t wait until the next blood orange season to experiment more!
Upside Down Blood Orange Olive Oil Cake

Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup granulated sugar
- 3 tbsp blood orange zest roughly 3-4 blood oranges
- 2 tbsp blood orange juice about 1 blood orange
- 1/4 cup plain greek yogurt
- 1/2 cup applesauce (or 2 eggs)
- 1/2 cup extra virgin olive oil
- 1 tsp tsp vanilla extract
- 3-4 blood oranges sliced
Instructions
- Mix the blood orange zest and sugar until evenly combined.
- Add the blood orange juice and yogurt and whisk together. Pour into the sugar mixture and mix until thoroughly combined.
- Then gently whisk in the vanilla extract and the applesauce.
- In a medium bowl, whisk together the flour, baking powder, and baking soda.
- Gently whisk the flour mixture into the sugar mixture until no large clumps remain.
- Switch to a rubber spatula and fold in the olive oil a little at a time.
- Line the pan with sliced blood oranges on the bottom and add the batter into the pan and smooth out the surface.
- Bake for 45-50 minutes, or until an inserted toothpick comes out clean from the center. Cool for about 15 minutes, unmold and cool to room temperature.
