Cinnamon Rolls
Happy Friday!! Do you want to have a fancy breakfast/brunch item with little effort? Try these cinnamon rolls!!! And they are perfect for a last minute Mother’s Day gift! This eggless breakfast was simple to make and tasted delicious. They are even vegan friendly when using plant based milk and butter.
The cream cheese icing drizzled on top went perfectly with the cinnamon sugar rolls! Simply mix cream cheese, powdered sugar, milk, and vanilla extract together!
Cinnamon Rolls
Servings 4 -6
Ingredients
- 1 packet active dry yeast
- 1 cup milk
- 1/2 cup butter divided
- 3 cups all-purpose flour
- 1 tbsp sugar
- 1 Tbsp ground cinnamon to taste
- 1/4 cup brown sugar
- Salt
- 1/2 tsp coconut oil
Cream Cheese Icing
- 4 oz cream cheese softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 2-4 tsp milk
Instructions
- Heat up the milk in the microwave for 30 seconds, stir and heat again for another 30 seconds.
- Add 3 tbsp butter into the milk and mix.
- Transfer to a mixing bowl and sprinkle the yeast. Let it activate for 10 minutes.
- Then add sugar and salt and stir.
- Next add in flour 1/2 cup at a time, stirring as you go (or use a stand mixer at speed 2-4) until well combined.
- Rinse your mixing bowl out, coat it with coconut oil, and add your dough ball back in. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until doubled in size.
- On a lightly floured surface, roll out the dough into a thin rectangle. Brush butter and top with cinnamon and brown sugar (as pictured above).
- Starting at one end, tightly roll up the dough and situate seam side down. Then with a serrated knife cut the dough into 1.5 inch sections and position in a well-buttered 9x13-inch baking pan.
- Bake rolls at 350 F for about 25-30 minutes until golden brown.
- Top with cream cheese icing!
Cream Cheese Icing
- Combine cream cheese, powdered sugar, and vanilla extract.
- Add 1 tsp of milk at a time and stir until desired consistency.
- Enjoy!
This recipe is fabulous! Cinnamon rolls are one of my favorite sweets. It takes me back to my mother buying me Cinnabon at the local mall. Cannot recommend this recipe highly enough!
