Diwali is coming up in a few short days, and this dry fruit chikki is perfect to make at the last minute! All of the ingredients are from my pantry and the chikki takes less than 30 minutes to make! You simply roast the nuts, melt and caramelize the jaggery on the stove, mix in the nuts and cardamom powder, flatten the sticky nut mixture, let it cool, break and enjoy! While it sounds like there are a lot of steps, its goes by very quick, so make sure you have everything prepped! If you don’t have jaggery on hand, you can use brown sugar or palm sugar. Be sure to pour the sticky nut mixture on parchment paper, and use another sheet of parchment paper on top to roll out. Use your hands (with oven mitts or a towel) to press down and flatten, and then use a rolling pin to even everything out. Be careful, the mixture is hot! Once it cools, break the pieces with your hands. Store in an airtight container at room temperature for a few weeks and enjoy!

Ingredients

  • 1/2 cup cashews roughly chopped
  • 1/2 cup almonds roughly chopped
  • 3/4 cup pistachios roughly chopped
  • 1 cup jaggery
  • 1 tbsp ghee
  • 1/4 cup water
  • 1/2 tsp cardamom powder

Instructions

  • Preheat oven to 200 F. When preheated, roast the nuts for 8-10 minutes.
  • Once the nuts are roasted, add ghee, water, and jaggery to a nonstick pan over medium high heat.
  • Constantly stir the jaggery until it is melted and starts to caramelize.
  • While the jaffery is boiling, constantly stir until the syrup starts to thicken for about 6-8 minutes.
  • Reduce the flame to low, mix in the nuts and cardamom powder. Stir until the nuts are coated completely.
  • Pour the nut mixture onto a sheet of parchment paper, and cover with another sheet of parchment paper.
  • Use your hands (with oven mitts or a towel) to press and flatten the mixture. Use a rolling pin to even the chikki out.
  • Let the chikki cool, and then break into pieces with your hands.
  • Enjoy!
