Eggplant Pizzas with Muir Glen

I am so excited to share this simple and delicious Eggplant Pizza Melts recipe sponsored by Muir Glen! Seriously, it only takes 3 simple ingredients plus any toppings you would like to add and less than 20 minutes to make! Roast the eggplant slices, add sauce, sprinkle cheese, broil for a few minutes and enjoy! This is my lazy version of eggplant parm (without the breading). Muir Glen’s tomatoes are grown in California and they focus on three main principles: organic, pollsters, and zero waste. They use bees to pollinate tomatoes resulting in larger and more fruit. I love that they have a tomato compost facility for skin, seeds, and bad fruit. These nutrients are given to the soil for new tomatoes to grow. Their zero waste concept helps create a cleaner planet.

Co-ops can be found in so many states (use the store locator to find the one closest to you). By shopping at a local co-op, you are giving back to your community. Their produce is local, organic, and fresh – benefiting local farmers. The East End co-op even has hot food and a juice bar. Eggplant Pizzas
Ingredients
- olive oil spray
- 2 medium eggplants cut in large circles about 1/4 inch
- 1 jar of Muir Glen Tomato Basil Pasta Sauce
- 2 cups shredded mozzarella and provolone blend cheese
- basil for garnishing
Instructions
- Preheat oven to 400 F.
- Lightly coat a baking tray with olive oil. Arrange the eggplant slices on the tray.
- Bake for about 5-8 minutes until bottoms are golden brown.
- Flip eggplant slices and layer sauce, cheese, and any toppings.
- Bake for about 5 minutes and broil for 2-3 minutes until cheese is bubbly.
- Enjoy!
