Gajar Halva (Carrot Pudding)
Gajar Halva is one of my favorite Indian sweets! This carrot pudding is very simple and easy to make! With only 5 ingredients, it takes less than 30 minutes!
The fourth day of Diwali, is Annakut, first day of the Indian New Year (lunar calendar)! Saal Mubarak! This is a common greeting for the new year, with saal meaning year and mubarak meaning good wishes. Usually, people celebrate by cooking lots of different sweets and dishes to take to the temple, family and friends. It is tradition that the first item purchased in the new year is salt! Without salt, food wouldn’t have taste. Naturally, as a food blogger, salt is one of my most essential items in my pantry
Above is my mini Annakut I cooked for Diwali, including Masala Chai Muffins, Samosa Puffs, Aloo Chaat, Palak Paneer, and Gajar Halva . Happy Diwali and Saal Mubarak!
Gajar Halva (Carrot Pudding)
Ingredients
- 1 lb carrots shredded
- 1 tbsp butter
- 1/4 cup cane sugar
- 1/4 cup heavy cream
- 1 tbsp cardamom powder
- cardamom seeds garnishing
- sliced almonds garnishing
Instructions
- Warm the butter in a nonstick pan over medium heat.
- Saute the shredded carrots for about 5-8 minutes, until slightly tender.
- Mix in the sugar and cook for about 5 more minutes.
- Stir in the heavy cream and cook until it burns out, about 5 minutes.
- Turn the heat off and mix in the cardamom powder.
- Enjoy!
