Goat Cheese, Arugula, and Fig Flatbread… Oh My!
I look forward to fig season all summer long. Figs have finally been in the grocery stores for a few weeks now, and here is one of my favorite combinations! Goat cheese and figs go together like peaches and cream. So of course I had to make a flatbread with these ingredients. The arugula adds a nice fresh flavor and it makes me feel a little healthier with all this cheese! 🙂
Below is my go to flat bread and pizza dough recipe. Usually, I make it the night before I want to use it, so its ready to go the next day. The leftover dough lasts about 5 days in the fridge, and then I can be put in the freezer. For this flatbread, I used about a third of the dough for nice thin crispy crust. For normal crust, use about half of the dough.
Step 1: Dough!
Flatbread Dough
Ingredients
- 1 packet active dry yeast
- 1 tsp sugar
- 1 cup warm water
- 1/2 tsp salt
- 2 tsp olive oil
- 3 cups all-purpose flour
Instructions
- Dissolve sugar and yeast in warm water. Let the mixture sit for 5 minutes until foamy.
- Add yeast mixture, salt, olive oil, and 2 1/2 cup flour into your standmixer.
- Using the dough hook, turn to speed 2 and mix for about 1-2 minutes.
- Add remaining flour, 1/2 cup at a time, until dough clings to dough hook and cleans sides of bowl. Knead on speed 5 until the dough is formed together the the sides of the bowl are clean (about 2-3 minutes).
- Place dough in a greased bowl and cover.
- Let the dough rise in warm place until doubled in size(about an hour).
Step 2: Flatbread!
Fig and Goat Cheese Flatbread
Ingredients
- 1/3 Flatbread Dough
- 1/4 cup soft goat cheese crumbled
- 1/4 cup Parmesan cheese grated
- 6-8 small figs sliced
- 1 cup fresh arugula
Balsamic Glaze
- 1/4 cup balsamic vinegar
- 1 tbsp honey
Instructions
- Preheat oven to 475 F. Place a sheet of parchment paper on baking sheet.
- Prepare the flatbread dough by rolling it out into a rectangle.
- Bake dough for about 8-10 minutes, until golden brown.
- Sprinkle a layer of parmesan cheese over dough.
- Top with goat cheese cheese sliced figs.
- Bake for another 7-10 minutes until cheese is melted and the figs are slightly caramelized.
- When flatbread is completely cooked, remove from oven. Top with fresh arugula and a drizzle the balsamic glaze.
- Enjoy!
Balsamic Glaze
- Combine balsamic vinegar and honey in a small saucepan over high heat.
- Bring to a boil, and reduce heat to a simmer. Simmer until liquid has reduced by half (about 5 minutes).
