Lentil Meatballs

 

(Len)til next weekend…I spent my afternoon meal prepping my lunches for the week. I made these lentil “meatballs” that I found on Tasty Vegetarian and topped them with basil, parm, and marinara sauce 🌿🧀🥫

 

 

Lentil Meatballs

Ingredients

  • 2 tbsp olive oil
  • 1 onion diced
  • 4-5 garlic cloves minced
  • 1 cup lentils cooked
  • 1 egg
  • 1 tbsp tomato paste
  • 1/4 cup parsley chopped
  • 1/4 cup parmasean grated
  • 1 tbsp italian seasonings
  • 1/3 cup breadcrumbs
  • salt and pepper to taste

Instructions

  • Heat a non-stick pan over medium heat then add 1 tbsp olive oil, onion and garlic cloves and sauté for 2-3 minutes, or until slightly golden brown then remove from heat.
  • To a food processor, add the garlic, onion, cooked lentils, egg, 1 tsp of olive oil, tomato paste, parsley, Parmesan, breadcrumbs, Italian seasonings, salt, and pepper and pulse, mixing until just combined.
  • Transfer the mixture to a medium-sized bowl.
  • Scoop out lentil mixture and form into balls to arrange on a parchment paper-lined baking sheet.
  • Bake for 10-15 minutes at 400˚F or until golden brown.
