Lentil Meatballs
(Len)til next weekend…I spent my afternoon meal prepping my lunches for the week. I made these lentil “meatballs” that I found on Tasty Vegetarian and topped them with basil, parm, and marinara sauce 🌿🧀🥫
Lentil Meatballs
Servings 6
Ingredients
- 2 tbsp olive oil
- 1 onion diced
- 4-5 garlic cloves minced
- 1 cup lentils cooked
- 1 egg
- 1 tbsp tomato paste
- 1/4 cup parsley chopped
- 1/4 cup parmasean grated
- 1 tbsp italian seasonings
- 1/3 cup breadcrumbs
- salt and pepper to taste
Instructions
- Heat a non-stick pan over medium heat then add 1 tbsp olive oil, onion and garlic cloves and sauté for 2-3 minutes, or until slightly golden brown then remove from heat.
- To a food processor, add the garlic, onion, cooked lentils, egg, 1 tsp of olive oil, tomato paste, parsley, Parmesan, breadcrumbs, Italian seasonings, salt, and pepper and pulse, mixing until just combined.
- Transfer the mixture to a medium-sized bowl.
- Scoop out lentil mixture and form into balls to arrange on a parchment paper-lined baking sheet.
- Bake for 10-15 minutes at 400˚F or until golden brown.
