Pav Bhaji Frittata

Cast Iron Skillet Pav Bhaji Frittata

Frittatas are so easy to make and can be eaten for breakfast, lunch or dinner. I’ve been meal prepping them as my lunch for the week. Simply saute some of the veggies on the stove, mix in the eggs, heavy cream, cheese, and seasonings, and then bake for about 15 minutes. That’s it! I like to use a cast iron skillet, so I only dirty one pan.

I have recently gotten into making frittatas after a friend introduced them to me. They are so creamy and full of veggies and protein. The best part is, you can add what ever you have in your fridge. I’ve tried making a frittata with whole milk instead of heavy cream, and it was not as rich and creamy. Personally, I prefer the taste of heavy cream in frittatas. My go to frittata is made with mushrooms, onions, and cheese. Most of the time, I will drizzle some hot sauce on top and eat a slice with salsa.

Pav Bhaji Frittata with Green Chutney

A few weeks ago, I remembered that in India, they make masala omelettes, so I thought why not combine the pav bhaji masala and veggies in a frittata. Pav Bhaji is one of my all time favorite meals. The bhaji is a spicy mashed vegetable dish (usually potatoes, peas, tomatoes, and onions) served with buttered pav, bread roll. For this dish, I added the vegetables into the frittata with pav bhaji masala. The masala can be found at your local Indian grocery store, or it can be substituted garam masala. Serve Pav Bhaji Frittata with cilantro and green chutney!

Pav Bhaji Frittata

Ingredients

  • 6 eggs
  • ½ cup heavy cream
  • 1 teaspoon salt
  • 2 tbsp pav bhaji masala
  • ½ cup shredded pepper jack cheese
  • 2 tbsp avocado oil
  • 4 baby potatoes diced
  • 1/2 white onion diced
  • 4 oz peas
  • 2 tomatoes diced
  • 1/4 cup cilantro chopped
  • 3 green onions chopped
  • cilantro for topping

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, whisk the eggs, heavy cream, salt, and pav bhaji masala.
  • Heat oil in a cast iron skillet over medium heat.
  • Add the potatoes, peas, and onion and saute for about 5-8 minutes.
  • Add the tomatoes, cilantro, and green onions.
  • Stir in the egg mixture into the pan.
  • Bake for 15 minutes.
  • Garnish with cilantro.
  • Enjoy!
