Summer Berry Pie

Summer is almost over, and this pie is perfect for the end of berry season! Simply combine all of the pie filling ingredients, layer onto premade pie dough, and bake for 50 minutes! The Summer Berry Pie can be ready in an hour and will make your home smell delicious!
Summer Berry Pie
Ingredients
- 2 sheets of premade pie dough
- 1 egg optional
- 1 tsp coarse sugar
Pie Filling
- 900 g fresh mixed berries
- 1 lemon zested
- 1 ⁄2 lemon juiced
- 1 ⁄4 cup flour
- 2 ⁄3 cup coarse sugar
- 1 tbsp cornstarch
- 1 tsp cinnamon powder
- 1 tbsp vanilla extract
Instructions
- Preheat the oven to 375oF.
- In a large bowl combine the pie filling ingredients and gently toss together .
- Line a pie dish with one of the premade pie dough sheets.
- Add the pie filling into the pie dish and spread onto an even layer.
- Place the second sheet of pie dough on top or optional lattice top. Pinch the sides of the dough together
- and cut a small cross in the middle to let out steam.
- Crack the egg to make an egg wash. Brush the top with the optional egg wash and dust on coarse sugar.
- Bake for 50-60 minutes until the top is golden brown and the interior pie filling is 200F.
- Let the pie cool completely for at least 4 hours before cutting.
- Enjoy!
