Sweet Potato Hand Pies with Lenox

Or if you want to take your sweet potato casserole to the next level to impress your friends and family, stuff them in between puff pastry sheets and drizzle cranberry icing on top!
If you are using leftover sweet potato casserole, these pastries take less than 30 minutes to put together and bake! Simply put some of the sweet potato mixture in between two puff pastry sheets, use a fork to seal the edges, and bake until golden brown. While the hand pies are baking, mix the cranberry cream cheese icing together to drizzle on top!
These sweet potato hand pies are perfect for breakfast, brunch, a snack, or even dessert! Pair them with apple cider, hot chocolate, or chai for an ultimate fall meal!
Sweet Potato Hand Pies
Ingredients
- 1 ½ cup sweet potato casserole
- 2 puff pastry sheets
Cranberry Cream Cheese Icing
- 1/2 cup cranberry sauce
- 1/2 cup cream cheese room temperature
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 400 F.
- Cut each pastry sheet into 3 rectangles.
- Scoop about 1/4 cup of the sweet potato casserole onto one end of the rectangle.
- Fold the other side of the dough on top of the mixture, and use a fork to seal the edges together.
- Bake for about 14-18 minutes, or until golden brown.
Cranberry Cream Cheese Icing
- Wisk softened cream cheese, cranberry sauce, and powdered sugar together by hand, or using a hand mixer.
- Drizzle the icing on top of the hand pies.
- Enjoy!
