Heat up the milk in the microwave for 30 seconds, stir and heat again for another 30 seconds.
Add 3 tbsp butter into the milk and mix.
Transfer to a mixing bowl and sprinkle the yeast. Let it activate for 10 minutes.
Then add sugar and salt and stir.
Next add in flour 1/2 cup at a time, stirring as you go (or use a stand mixer at speed 2-4) until well combined.
Rinse your mixing bowl out, coat it with coconut oil, and add your dough ball back in. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until doubled in size.
On a lightly floured surface, roll out the dough into a thin rectangle. Brush butter and top with cinnamon and brown sugar (as pictured above).
Starting at one end, tightly roll up the dough and situate seam side down. Then with a serrated knife cut the dough into 1.5 inch sections and position in a well-buttered 9x13-inch baking pan.
Bake rolls at 350 F for about 25-30 minutes until golden brown.
Top with cream cheese icing!
Cream Cheese Icing
Combine cream cheese, powdered sugar, and vanilla extract.
Add 1 tsp of milk at a time and stir until desired consistency.
