Mix the blood orange zest and sugar until evenly combined.
Add the blood orange juice and yogurt and whisk together. Pour into the sugar mixture and mix until thoroughly combined.
Then gently whisk in the vanilla extract and the applesauce.
In a medium bowl, whisk together the flour, baking powder, and baking soda.
Gently whisk the flour mixture into the sugar mixture until no large clumps remain.
Switch to a rubber spatula and fold in the olive oil a little at a time.
Line the pan with sliced blood oranges on the bottom and add the batter into the pan and smooth out the surface.
Bake for 45-50 minutes, or until an inserted toothpick comes out clean from the center. Cool for about 15 minutes, unmold and cool to room temperature.
